About

Welcome to Simmer Atlas

Simmer Atlas is a home cooking site that maps the world’s everyday food, one dish at a time. We start with the dishes of South Asia, such as karahi, nihari, haleem, kebabs and biryani, and we are adding more cuisines as we go.

Each recipe is written from the traditional method. We compare several trusted classic versions, keep what they agree on, and explain the amounts, the timings and the signs to look for at each step. We also say plainly when a dish needs a swap for ingredients that are hard to find outside South Asia.

Who is behind it

Simmer Atlas is an independent site written by Zeeshan Ashiq in Lahore, Pakistan, where many of these dishes are part of everyday life.
