Malai boti is boneless chicken marinated in cream, cheese, white pepper and mild spices, then grilled until soft and lightly golden. It is a favorite at Pakistani BBQ restaurants.

This recipe gives a creamy, mild boti that works on a grill, in an oven or in a pan.

Why you will like this version

  • Creamy and mild, kid-friendly.
  • No red chili needed.
  • Grill, oven or pan.

What is malai boti?

Malai means cream and boti means pieces. The white marinade keeps the chicken tender and gives it a rich flavor.

Ingredients that matter

  • Boneless chicken: thighs are juicier than breast.
  • Cream and cheese: for the creamy coating.
  • White pepper and cardamom: for gentle aroma.

Tips for the best malai boti

  • Marinate for at least 4 hours.
  • Cook on medium heat so the cream does not burn.
  • Baste with a little butter while cooking.
