Palak Gosht Recipe (Mutton with Spinach)

Palak gosht is a comforting Pakistani curry of tender meat in a spinach gravy. It is green, mildly spiced and full of flavour, and it goes with roti or plain rice.

Cooking the spinach briefly keeps the colour bright, and the meat is first cooked until nearly tender so everything finishes at the same time.

Why you will like this version

  • A vivid green gravy that does not turn brown.
  • Lighter than most meat curries.
  • Pressure cooker timing included.

What is palak gosht?

Palak means spinach and gosht means meat. The curry is common in Punjab and across Pakistan, made with mutton, beef or chicken.

Ingredients that matter

  • Fresh spinach: use baby or regular. Frozen spinach works in a pinch.
  • Bone-in mutton: gives the gravy flavour.
  • Ginger and garlic: the main aromatics.

Tips for the best palak gosht

  • Blanch the spinach for 2 minutes, then cool in ice water to keep the colour.
  • Add the spinach puree only after the meat is nearly tender.
  • Do not cover the pot while the spinach simmers.
